GREEK CHICKEN KABOBS

These Greek Chicken Kabobs are low in fat and carbs and I have a feeling these are going to be my favorite kabobs for the summer. I know they can seem a little overwhelming when looking at the ingredients but they're really easy to make.









Because mom life has my busy I normally prepare them on Londons first nap of the day so they can marinate all day. Don't forget to make the Cucumber Salad and Tzatziki sauce to go with these. I also love to get pita bread too.



INGREDINETS

1.5 pounds chicken breast, diced

1 Tbsp olive oil

2 Tbsp freshly squeeze lemon juice

2 tsp oregano

1 garlic clove, minced





DIRECTIONS

  1. In a bag mix together chicken, olive oil, red wine vinegar, lemon juice, oregano, and garlic. Let marinate for 1 hour or over night.

  2. Soak skewers for at least 30 minutes in water to prevent burning.

  3. Take 4oz of chicken and place on skewer.

  4. Preheat grill to 400 degrees. Place kabobs on grill turning 2-3 times until all sides are cook and meat is no longer pink.

  5. Enjoy with Cucumber Salad, Tzatziki sauce, and pita bread. (not included in macros).
