SHREDDED BEEF ENCHILADA

These Shredded Beef Enchiladas are made with my Crockpot Mexican Shredded Beef. They taste amazing, macro friendly, and you only have to make one meal for the entire family.








INGREDIENTS


1 1/4 cups reduced fat shredded cheese


DIRECTIONS

  1. Preheat oven to 350 degrees F. Spray a small casserole dish with non stick cooking spray. Set aside.

  2. Heat corn tortillas in microwave for 20-30 seconds. Add shredded beef and cheese in the middle to corn tortilla. Roll corn tortilla and place in dish. Repeat until finished.

  3. Pour enchilada sauce over enchiladas and top with remaining cheese.

  4. Bake for 20-22 minutes. Turn boiler on high and cook for another 2-3 minutes. Watch closing so you don't burn the enchiladas.

  5. Feel free to double recipe if needed. (Macros are based on 1 enchilada)
