This Crockpot Mexican Shredded Beef is so simple to make. It great for tacos, enchiladas, nachos, or taquitos.
1 cup beef stock
1 Tbsp chili powder
2 tsp cumin
2 tsp garlic powder
1 tsp onion powder
Spray crockpot with non stick cooking spray. Place roast in crockpot and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
Mix together beef stock and enchilada sauce and pour over roast.
Place lid on crockpot and cook on low for 8 hours.
Using a fork shredded roast.
