CROCKPOT MEXICAN SHREDDED BEEF

This Crockpot Mexican Shredded Beef is so simple to make. It great for tacos, enchiladas, nachos, or taquitos.


I used a beef roast from Butcher Box. If you have never heard about Butcher Box there beef is 100% grass fed. What I love most is it is delivered right to your front door. Check them out here.


INGEDIENTS


2 1/2 pound beef roast

1 cup beef stock

1/2 cup red enchilada sauce

1 Tbsp chili powder

2 tsp cumin

2 tsp paprika

2 tsp garlic powder

1 tsp onion powder

salt/pepper


DIRECTIONS

  1. Spray crockpot with non stick cooking spray. Place roast in crockpot and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.

  2. Mix together beef stock and enchilada sauce and pour over roast.

  3. Place lid on crockpot and cook on low for 8 hours.

  4. Using a fork shredded roast.

  5. ENJOY!
