INSTANT POT WHITE CHICKEN CHILI

This Instant Pot White Chicken Chili recipe can be made in under 30 minutes or you can put it in the crockpot before work and have it ready for you when you get home. It's family friendly, packed with protein, and fiber.








I was telling my sister the other day that I could eat chili every week switching off between this recipe and my Turkey Chili recipe.













INGREDIENTS


1 pound chicken breast

3 cans white beans, drained (great northern beans or cannellini bean)

2 cups chicken broth

1/2 onion, diced

1 tsp garlic powder

salt/pepper


DIRECTIONS


  1. Spray instant pot with non stick cooking spray.

  2. Add beans, chicken broth, onion, cumin, garlic powder, salt, and pepper to instant pot. Mix well. Add chicken and push down until covered by liquid.

  3. Place lid on instant pot and make sure valve is set to sealing. Set on (High pressure) for 15 minutes. Let naturally release for 10 minutes then move valve to venting.

  4. Remove chicken from instant pot and shred using 2 forks. Place chicken back in Instant pot and mix well.

  5. Severe with avocado, cilantro, chips, greek yogurt, or sour cream. ENJOY!!
