Last summer I made a lot of mason jar salads but the recipes got lost on my instagram feed. I will be making them all again and slowly adding them to my website. I love mason jar salads because they're easy to make, you can add lots of veggies to them, and stay fresh all week. Plus you can have meal prep done in 20 minutes.
16oz extra lean ground turkey
200g cherry tomatoes, diced
100g mini sweet peppers, diced
120g Bolthouse ranch
6 cups romain lettuce, chopped
1. Heat a medium size pan over medium heat. Cook ground turkey until no longer pink in the middle. Season with your favorite seasoning. I used taco seasoning. Let cool.
2. Cook quinoa according to package.
3. In 4 32oz wide mouth mason jars divided ingredients equally. Start by layering ranch dressing, tomatoes, sweet peppers, ground turkey, quinoa, and topping with romaine lettuce.
4. Cover and refrigerate up to 5 days.
