Even though it feels like winter here in Utah in the middle of May, I have been enjoy lots of fruit salads this last week. I've never been a big salad girl but its what sounds good right now and that is what I love about Macro Counting is I can eat what I'm feeling.
3-4 handfuls of spring salad mix
3oz chicken, cooked
76g pineapple, diced
10g pumpkin seeds
1. Cook chicken how you would like. I cooked mine in the Air Fryer on 390 degrees for 10-11 minutes flipping half way through.
2. In a big salad bowl, add spring mix. Top with pineapple, blueberries, pumpkin seeds, chicken, and Raspberry Balsamic dressing.
