These Greek Chicken Gyros are a lot easier to make than it looks. I put off making them again because I look at the ingredients list and it seems so long but it was super fast. It also switched things up from my normal grilled chicken I have been having lately.
INGREDIENTS
Chicken gyros:
1.5 pounds chicken breast
1 Tbsp olive oil
2 Tbsp freshly squeeze lemon juice
2 tsp oregano
1 garlic clove, minced
Tzatkiki sauce:
1 cup non fat greek yogurt
2 Tbsp freshly squeeze lemon juice
1 garlic clove, minced
salt/pepper
100g shredded cucumber
For wraps:
6 pita bread
1 tomato, sliced thin
1/2 onion, sliced
1-2 handfuls of arugula
For Tzatkiki sauce:
1. In a medium size bowl, mix together greek yogurt, red wine vinegar, lemon juice, garlic, dill, salt/pepper, and cucumber.
For chicken:
1. In a bag mix together chicken, olive oil, red wine vinegar, lemon juice, oregano, and garlic. Let marinate for 1 hour or over night.
2. Pre-heat grill to medium-high heat. Cook chicken until completely cooked and no longer pink in the medium. Once chicken is cooked cut into strips.
For wrap:
1. Heat pita on grill. Remove pita from grill and layer pita with Tzatkiki sauce, arugula, chicken, onion, and sliced tomatoes.
