CROCKPOT VEGETABLE BEEF SOUP

This crockpot vegetable beef soup is packed with protein, veggies, and fiber. Its the perfect crockpot meal for any day of the week.








I love the winter months because I feel like it is easier to get in vegetables with making crockpot soups. Plus most crockpot meals are macro friendly or easy to make macro friendly if you're counting macros.





INGREDIENTS

1 pound ground beef

4 cups (520g) potatoes, diced

1 14.5oz can diced tomatoes

1 cup (100g) carrots, sliced

1 10oz bag frozen mixed veggies

1/2 onion, chopped

4 cups beef broth

2 garlic cloves

1 tsp Italian seasoning

salt/pepper


DIRECTIONS


  1. Preheat a medium size pan over medium heat, brown ground beef until no longer pink in the middle. Add onions, garlic, Italian seasoning, salt, and pepper. Cook until onions are translucent. Transfer to large crockpot.

  2. Add potatoes, diced tomatoes, carrots, mixed vegges, and beef broth to crockpot and mix well.

  3. Cook on high for 4 hours or low for 6-8 hours.
