With just a few ingredients you will have these sourdough discard pancakes made in no time. These are perfect to make for the entire family. I make a big batch for the week and reheat them in the toaster for a quick breakfast in the morning.
INGREDIENTS
2 tablespoon sugar
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 - 1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup milk
1 large egg
1 tablespoons melted butter
DIRECTIONS
In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Mix well.
In a separate bowl, whisk together the sourdough discard, sugar, milk, egg, and melted butter.
Pour the dry ingredients into the wet ingredients. Stir until just combined.
Let the batter rest for about 5 minutes to allow it to thicken slightly.
Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface.
Pour about 1/4 cup of the batter onto the skillet for each pancake. If desired, you can sprinkle additional ingredients like chocolate chips or berries on top.
Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
Flip the pancake and cook for an additional 2-3 minutes, or until golden brown and cooked through.
Repeat with the remaining batter.
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
