HEALTHY CHICKEN FRIED RICE

Lately, I have been on a Chicken Fried Rice kick. I have been making it weekly. I love this recipe because it's loaded with veggies and simple to make. It also great for meal prep or leftovers.









One of my favorite things to use is InnovAsian rice when making this meal. I cuts down on time and you have less dishes to clean after.





INGREDIENTS

1 pound chicken breast, diced

3 cups cooked rice

10oz bag frozen cauliflower rice

10oz bag frozen peas and carrots

3 eggs

1/4-1/2 cup soy sauce

1 Tbsp olive oil

1 tsp garlic powder

salt/pepper



DIRECTIONS

  1. Heat a large frying pan over medium heat. Add Olive oil and chicken. Season chicken with garlic powder, salt and pepper. Cook chicken until no longer pink in the middle.

  2. Move chicken to one side of the pan and scramble eggs. Mix chicken and eggs together.

  3. Add rice, cauliflower rice, peas and carrots and mix well.

  4. Add soy sauce and cook on low for 10-15 minutes.

  5. Enjoy!
