It's been a long time since I have made an egg bake so I thought I would switch it up from my last one I made and make this one with turkey sausage. Due to mom life I sometimes don't have time to let bacon cook and then make an egg bake so using already cooked
turkey sausage makes it a lot easier. Anyways
this Sausage Hashbrown Egg Bake is also a
great recipe for meal prep. It heats up well in
the microwave.
INGREDIENTS
6 wholes eggs
3/4 cups reduced fat shredded cheese
2 handfuls spinach, chopped
salt/pepper
DIRECTIONS
1. Preheat oven to 350 degrees F. Spray a 9 x 13 inch casserole dish with non-stick cooking spray.
2. Add hash browns to the bottom of the casserole dish. Layer with turkey sausage and spinach.
3. In a bowl, whisk together egg whites and whole eggs. Season with salt and pepper. Pour eggs over hash browns, turkey bacon, and spinach. Top with shredded cheese.
4. Bake for 40-45 minutes. Enjoy!
