Calling all M&M lovers!! These Christmas M&M Cookies are the perfect cookie for Santa. They're soft, chewy, and easy to make. I love the red and green in them. The nice thing about this recipes is you can use it for other holidays with switching out the colors of M&M's. These cookies are made with Kodiak cakes buttermilk pancake mix.
Tips for making these cookies. Make sure your butter is at room temperature. Also make sure you cream together your butter and sugar with and electric mixer for 2-3 minutes before adding other ingredients.
3/4 cup (144g) sugar
1/2 cup (1 stick) butter, softened at room temperature
2 large eggs
1 tsp vanilla extract
84g red and green M&M, crushed
1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper. Set aside.
2. In your kitchen aid or with an electric mixer, mix together butter and sugar until fluffy about 2-3 minutes. Add vanilla extract and eggs. Mix well.
3. Add Kodiak cakes too wet ingredients. Fold in M&Ms.
5 . Use a cookie dough scoop or form into 1 inch balls. Place on baking sheet 2 inches apart to allow room for the cookies to spread.
6. Bake for 9-11 minutes. Remove from oven and transfer to wire rack for cooling.
