CHOCOLATE CHIP BANANA PROTEIN MUFFINS

I woke up this morning wanting to bake. Plus I have been staring at my very ripped bananas sitting in the corner of my kitchen. It was either freeze them for protein shakes or make banana muffins and muffins sounded a lot better. This is a simple and fast recipe. They also

smell amazing when baking that you can't wait

for the timer to go off. Enjoy!








INGREDIENTS

228g mashed banana

2 tsp baking powder

1/4 tsp salt

1 tsp cinnamon

1/2 tsp vanilla extract

1/3 cup baking stevia

243g egg whites

2oz unsweetened almond milk

30g mini chocolate chips






DIRECTIONS


1. Preheat oven to 350 degrees. Place muffin liners in muffin pan or spray well with non-stick cooking spray

2. In a medium size bowl, mix together coconut flour, protein powder, baking powder, cinnamon, baking stevia and salt. Set aside.

3. In a large mixing bowl, mash banana, add egg whites, vanilla extract and almond milk and mix well. Add dry ingredients to wet ingredients and mix well. Fold in chocolate chips.

4. Fill each muffin liner equally and bake at 350 degrees for 19-22 minutes.
