BLUEBERRY BANANA OAT MUFFINS

BLUEBERRY BANANA OAT MUFFINS


When it comes to eating healthy we always think low fat or low carb but really what is important is eating more Whole Foods and foods higher in fiber and protein. These muffins would be prefect for breakfast or an afternoon snack.




BLUEBERRY BANANA OAT MUFFINS






INGREDIENTS


2 bananas

1/2 cup sugar

4 Tbsp flaxseed

1 egg

1/2-1 cup blueberries frozen or fresh

2 tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1 tsp vanilla extract

splash of milk



DIRECTIONS


  1. Preheat oven to 350 degrees F. Line a muffin pan with muffin lines and set aside.

  2. In a small bowl, mix together oats, whole wheat flour, flaxseed, baking powder, salt, and cinnamon. Set aside.

  3. In a large bowl, mash up 2 bananas. Nest add in the egg, sugar, yogurt, milk, and vanilla extract. Mix well.

  4. Add dry ingredient into wet ingredients and mix well. Fold in blueberries.

  5. Fill each muffin liner equal.

  6. Place in oven and cook for 20-22 minutes.
