These Sausage Veggies Egg White Muffins are easy to make, packed with protein, and macro friendly. I haven't tracked macros in a while but that doesn't mean I don't still use the tools I learned while tracking. So I still make sure I have protein with every meal even breakfast. I like to start the day off with at least 25 grams of protein and these muffins make it easy to get that in.
2 1/4 cups egg whites
1 red bell pepper, diced
1 handful spinach, chopped
1/2 cup reduced fat mozzarella shredded cheese
1. Preheat oven to 350 degrees F. Spray a muffin tin with non-stick cooking spray.
2. Add bell pepper, spinach, and turkey sausage to each muffin. Then add egg whites to each muffin and top with shredded cheese.
3. Place in oven and cook for 20-25 minutes.
